Cool, Summer, Pasta Salad
Hello and Happy Friday.
It is incredibly hot outside now, work continues to move forward, the kids are out of school and into summer routines, and we are all trying to find simple or easy and healthy ways to nourish ourselves and our families on these toasty summer days. Despite being outside more, moving my body more, and being hungry, I find that my food inspiration takes a hit during the summer. It’s hot and I just want refreshing and nourishing foods. But what is that? Are you like me?
I have been inspired by a couple Pasta Salad Recipes that use in-season produce and provide simple, healthy, and tasty dressing. Jessica in the Kitchen has a Balsamic based Dressing and a mix of vegetables. I used gluten free pasta elbows by Jovial. I also added celery and celery leaf, cucumber, Roma tomato, green olives, vegan feta, and white beans for protein and fiber. It was so good!
The Banana Diaries also has a great Tahini based Dressing in her quick and easy pasta salad. Add any additional vegetables that you have in the fridge such as celery, carrots (shredded or chopped), more tomatoes and/or cucumbers, etc.
Add 3oz or more of your meat of choice and/or add extra legumes (chickpeas, lentils, or great northern) to include quality protein.
If you prefer or need gluten free pasta, I typically turn to Jovial, Dellalo, or Rummo pasta as they cook well and taste great al dente.
